梨山青心烏龍茶的特色在於其獨特的高山冷礦香與蜜果香，茶湯滑順甘甜、回甘力強，並因葉質厚實而耐沖泡。

其風味主要受惠於梨山地區高海拔、日夜溫差大且常年雲霧繚繞的環境，造就了茶葉果膠質含量高，風味層次豐富，帶有蘭花香、高山冷礦味，以及梨山特有的蜜蘋果或水蜜桃香。 

香氣特色

獨特香氣：融合了高山冷冽的礦石香，以及梨山產區盛產水果帶來的蜜果香（如蘋果、水蜜桃）。

蘭花香與花草香：通常帶有淡雅的蘭花香，這是青心烏龍品種的經典香氣之一。

口感與滋味

滑順甘甜：茶湯口感滑順、飽滿，帶有奶油般的潤滑感，並有持久的甘甜味。
回甘力強：飲後口中會緩慢回甘，喉韻深沉持久。
果膠質濃稠：果膠質含量高，使茶湯口感濃稠，更加滑順。 

茶葉品質
葉質肥厚：高海拔環境使茶葉葉肉厚實、柔軟，葉色呈濃綠並具光澤。
耐沖泡：因為果膠質豐富，耐於多次沖泡，每次沖泡仍能保留甘醇風味。
茶湯水色：茶湯色澤呈蜜綠顯黃，清澈透亮。
